A couple of years ago, we got the opportunity to live in Bay area, California. While driving by the scenic Monterey bay on the way to Carmel, we passed by strawberry fields with ripe strawberries dangling from the plants like big red rubies. Luckily the farmers were selling those strawberries. They are till date the best strawberries we have ever had. I learnt that day that strawberries can be really sweet! Sweet delicious flavorful beauties! I would religiously go to the farmers market every Sunday in Mountain view, California. We enjoyed some of the most flavorful fruits there. We are back home in the mid west now and I am back to buying grocery store strawberries. Every now and then, we get lucky with a tender sweet batch.
I love cooking with my son and I think he loves it too. Especially sampling the goodies in the process. We made chocolate covered strawberries this weekend. It is super easy.
Just two ingredients :semi sweet chocolate chips and strawberries.
Melt about 3/4 cup of Ghirardelli semi sweet chocolate chips in the microwave in 30 second increments . This is what it looked like after 1 minute.
I put it for another minute, checking it every 30 seconds. The chocolate was smooth and luscious.
Dip the strawberries. I suggest using a small deep bowl to melt the chocolate instead of a wide one. This will make the dunking process easy. Dip the strawberries and turn them around once, remove and let dry.
The chocolate was enough for 10 medium sized strawberries. I would not suggest making more than you would consume that day. If they get more than a day old they have a tendency to sweat.
Let the chocolate cool completely to form a crust around the fruit.
They are fantastic. My husband is not fond of strawberries, even he loved them!
Ingredients: strawberries 10
semi sweet chocolate chips 3/4 cup
Melt the chocolate chips in the microwave in 30 second increments. It took 2 minutes for me. Might take more or less depending on your microwave oven.
Dip strawberries, turn and remove.
Place on parchment paper and let dry.
