Cauliflower Parmesan toast

Saturday morning leisure + clean kitchen island = inspiration.

I mixed coarsely processed cauliflower with parmesan, garlic, salt, cilantro and green chillies topped generously over bread and toasted in the oven for a quick, fresh, crunchy breakfast.

 Ingredients:

Cauliflower processed in food processor 1 cup

Grated parmesan cheese 1/4 cup + some for sprinkling on top

Garlic 2 cloves finely chopped or added to processor with cauliflower

Green chilli or 1/2 deseeded jalapeño finely chopped

Cilantro 1 tbsp. finely chopped

Salt to taste

Bread 5 slices (any hearty bread will do, I used La Brea Italian Round bread)

Olive oil for toasting

 

Procedure:

  • Pre heat oven to 425 F

  • Process cauliflower in a food processor, add parmesan, garlic, cilantro, green chilli and salt. Mix well and check seasoning.

  • Brush olive oil on both sides of bread and place on baking sheet.

  • Top generously with cauliflower mixture.

  • Sprinkle some more parmesan and drizzle with olive oil.

  • Bake on bottom rack for 5 minutes. This ensures the bottom gets toasted

  • Set oven in broil mode and toast for 2 minutes on top shelf.  This gives a beautiful crisp texture to the top.

Enjoy then straight out of the oven, piping hot!

Top generously with cauliflower mixture.

 Enjoy them piping hot!
