Spinach paneer pizza - Palak paneer pizza

If you enjoy palak paneer with naan in an Indian restaurant, this recipe will come close if not better.  Soft pizza crust topped with a fresh  spinach sauce, topped with small paneer pieces, some onions and cheese, absolutely fantastic. Best enjoyed straight out of the oven.

 

Pizza base:

 

All about that base about that base no trouble ;)   ......

Just followed the instructions on the back of a packet of pizza yeast. It is available in the grocery store in the same section with ready made pizza base, pizza sauce etc.

 

I got 3 individual pizzas using 1 packet of pizza yeast.

 

 

Pizza sauce:

Spinach is sautéed with garlic and a green chilli and coarsely pureed. Thinly sliced onions are sautéed till translucent and  the spinach puree  is added  and flavored very simply with turmeric and garam masala. It's that simple and ridiculously tasty. The key is to not overcook the spinach. That helps retain its vibrant green color. My recipe made a lot more than I needed. I  plan to mix the leftovers with paneer  and enjoy the curry for another meal. Feel free to use half the quantities and try this recipe.

 

Ingredients:

Fresh baby spinach -12 oz

Garlic - 2 cloves coarsely chopped

Ginger - 1 tbsp. coarsely chopped

Green chilli - 1 coarsely chopped

Yellow onion - 1 medium thinly sliced

Turmeric - 1/2 tsp

Garam masala - 1/2 tsp

Olive oil - 3 tbsp

Salt to taste

 

 

Procedure:

  1. Take a pan and add 2 tbsp. oil, add the garlic, ginger and green chilli.

  2. Once it sizzles, add the washed spinach.

  3. I added half, let it wilt and then added the remaining.

  4. Once it wilts, stop cooking and let it cool.

  5. In the mean while, slice a medium sized onion thinly.

  6. Once the spinach cools a little, pan will have some liquid, its the juice released from the cooked spinach. Skim the spinach from the pan and make a coarse puree in a blender. The puree should be thick.

  7. Discard the spinach liquid from the pan and add a tablespoon of oil.

  8. Add onion and sauté till translucent.

  9. Add the spinach puree, salt, turmeric and garam masala.

  10. Mix well, taste and adjust seasoning if necessary.

The sauce is done.

If you add cubed paneer  at this point and warm it for a few minutes, you have palak paneer!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Toppings:

Paneer - 1/3 of a slab of store bought paneer diced small

Yellow onion - 1/2  medium sized thinly sliced

Shredded Italian cheese - 1 cup

 

Procedure:

Place pizza  stone* in oven and pre heat to 425 F. (You can always use a baking  sheet)

Divide pizza dough into 3 equal parts.

Roll out the dough, spread sauce, add onions and paneer, top with some shredded Italian cheese.

Bake  for 9-10  minutes and enjoy piping hot!

* If you plan to make pizzas at home on a regular basis, a pizza stone is a great investment.
