I remember a Mexican chef once saying that the best guacamole is the most simple one using few ingredients, letting the ripe fresh avocado shine through. I used to add onions and tomatoes to the guacamole earlier. Now I make it very simple with avocado, lime/lemon juice, jalapeno, cilantro and garlic or cumin depending on my mood.
Ripe fresh avocados - 3
Green chilli - 1 or 1/2 deseeded Jalapeno ( more or less depending on taste)
Cilantro - a handful
Lime/ Lemon juice- 1 had lemons this time ~2 tbsp.
Salt to taste
Garlic - 1 pod (optional)
Choose fresh ripe avocados ( when you press on it, there should be slight give, but it should not be squishy or too hard)
Wash and cut in half and remove the seed.
Squeeze lemon juice.
Prep other ingredients.
Use a spoon to scoop the avocado from it's skin.
Add all ingredients to a blender or mash with a fork, I used a blender in pulse mode because I was in a rush.
Taste, adjust seasoning and enjoy!
