This is my spin on matar kachoris. Matar kachoris are deep fried dough balls that are filled with a spicy green peas mixture. You will find different variants of this all across India. My matar katoris (bowls) have the same filling served in a crispy and flaky fillo dough bowl. I could prep the fillo dough ahead of time, prep the filling and warm them up right before serving them. This is a great idea for parties since you can prep everything the day before and they make for a great presentation.
Preparing the fillo bowls:
I used store bought fillo dough sheets . I placed six sheets together and cut them and placed them in a mini muffin tray and baked them. The sheets are very delicate and need to be handled with care. Every two sheets are stuck together. I used three such sets of two sheets for the bowls.
I placed two sheets on the counter and brushed them lightly with olive oil ( If I were making something sweet, I would have used melted butter).
I placed another two sheets on top.
Brushed them with oil and placed another two sheets on this.
I gently pressed them all together and cut this into 24 rectangles that would fit into the mini muffin sheet.
Bake as per package instructions.

Let them cool to room temperature and store in an airtight container till you are ready for them.
I used Indian green peas for this dish because they are more chewy and less sweet. You could use any green peas you like.
Frozen Indian green peas - 1 1/2 cups
Cumin powder - 1 tsp
Fennel seeds - 1/2 tsp
Ginger - 1/2 tsp finely chopped
Garlic - 1 tsp finely chopped
Green chillies - 1 finely chopped ( add more according to taste)
Cilantro - a handful finely chopped
Frozen/fresh shredded coconut - 1/4 cup
Amchur (Dry mango powder) - 1/4 tsp
Turmeric - 1/4 tsp
Salt to taste
Oil - 2-3 tbsp
Cook the green peas in water. Once they are cooked, drain and coarsely mash with a potato masher.
In a pan, add oil and add fennel seeds, once they sizzle, add ginger, garlic and green chillies.
Fry till there is no raw garlic smell.
Add cumin powder and turmeric and mix well.
Add the coarsely mashed green peas and mix well.
Add salt to taste and amchur( adds a tangy flavor) and mix.
Add shredded coconut and finely chopped cilantro and mix well.
Taste and adjust seasoning. It should taste salty, spicy and tangy.
Let it cool and store it till you are ready to use it.
Making the matar katoris:
When you are ready to serve, heat oven to 350 F.
Fill the fillo dough cups with the peas mixture and place in oven for 5 to 7 minutes in the middle rack.
