Mango and black bean salsa

A family favorite! When fresh sweet mangoes are available in abundance in the bulk grocery store and you have had your fill and want to use up the rest before they get stale!

 

 

 

Ingredients:

*Ripe sweet mango - 2 diced small ( I used ataulfo mangoes, they are small, if you are using a                                                                     bigger variety use only 1)

Black beans - 1/2 can 

Onion - 1/2 finely chopped

Red mini pepper - 1 finely chopped (optional- added it for color)

Cilantro - 1 tbsp finely chopped

Jalapeno - 1 de-seeded  finely chopped ( use as per taste)

Lime juice - 1/2 tsp

Salt to taste

 

Procedure:

Rinse a can of black beans and chop all other ingredients and mix together.

Enjoy with tortilla chips or as a side salad!

 

 

 

* For Ataulfo mangoes, choose one that looks slightly wrinkled. It is perfectly ripe. If it is yellow and firm, it might still be sour.
