If you have a kid in elementary school you might get a kick out of the title. My kid kept singing this song all the time while he was waiting for the popsicles! The original goes like this "pop see ko pop pop see ko, my hands are high , my feet are low and this is how I pop see ko"!
It's summer and it's home made popsicle time! This time they are strawberry and mango.
This blog is just to share my excitement and fun of making popsicles at home, there is not so much for a recipe really. It's basically pureed fruit frozen in popsicle molds.
I have a set of 6 molds that the proportions in the recipe worked great for. Okay, okay I admit, they worked great after I enjoyed a few generous spoonfuls of the purees! So you might have a little extra for a few cups or few licks :)
Strawberries - 1 pint
Mangoes - 3 Ataulfos
Sugar - 2 tbsp (optional)
Puree strawberries with 1 tbsp of sugar. Do this only if the berries are not sweet. Freezing also slightly reduces the sweetness, so I like to add just a little sugar.
Pour halfway in the molds and let it slightly set for 30 minutes.
Peel and puree mangoes along with sugar (again purely optional).
Pour into the molds and put the popsicle sticks and let them set.
The little one could barely wait till I got done with a few clicks....
