Savory eggless sweet potato waffles

We love sweet potatoes in our family. I have had jacket potatoes using sweet potatoes on my mind since last week and I even got chives and sour cream from the grocery store. When sonny boy wanted waffles for breakfast, I thought, why not try sweet potato waffles with jacket potato flavors. So, I added chives and green chillies (because we like it spicy) to the waffle mix. I also had fresh cranberries looking bright and beautiful in the fridge, so they went into a sweet and spicy cranberry raisin chutney to accompany these waffles. I love using Kodiak pancake and waffle mix for pancakes and waffles. You could use a mix of whole wheat and all-purpose flour if you like or use only all purpose flour like I did this time . I cooked a whole sweet potato in the microwave, peeled the skin and mashed it. I added milk, some olive oil, flour, salt, ginger powder, black pepper, chives and green chillies to make a thick batter and made the waffles. Along with sour cream and chutney they were delightful.




Sweet potato – 1 medium sized

All purpose flour – 1 cup

Milk – 1 cup (quantity will depend on the size and moisture of sweet potato and flour used)

Green chilli – 1 finely chopped (use as per taste)

Chives – 1 tbsp. finely chopped

Salt – as per taste

Black pepper – ¼ tsp. (as per taste)

Flax seed meal – 1 tbsp. + Warm water – 2.5 tbsp. (or use egg replacer for 1 egg)

Ground ginger – ¼ tsp.

Oil – 2 tbsp.



  1. Wash a sweet potato thoroughly and poke a few times with a knife and cook it in the microwave oven in baked potato mode (otherwise bake in a 400 F oven for 50 minutes)

  2. Peel and mash or grate sweet potato.

  3. In the meanwhile, in a small cup, mix the flax seed meal with some warm water and set aside.

  4. To the mashed sweet potato, add salt, pepper, chives, green chillies and ground ginger. Mix well.

  5. Add the milk and oil and mix well.

  6. Add the flax seed and water mix and mix well.

  7. Now start adding the flour in small quantities and fold it in gently. When it is all thoroughly mixed up, it should look like a thick batter. If it is a little runny, add more flour. If it is too thick add a little milk. If it is runny, you run the risk of making limp waffles.

  8. Now cook as per instructions on your waffle iron. I have a super cheap waffle iron and I never follow the red and green light cooking indicators on the waffle iron. These take around 5 minutes to cook. Please be patient. Once you cook your first waffle you will get an idea of how long they will take to cook in yours.

  9. Enjoy with a small dollop of sour cream and some spicy cranberry chutney. Yumm.

That is fall flavors in every bite.



Cranberry raisin chutney:




Cranberries – 1 cup fresh

Golden raisins – ½ cup

Water - 1 cup

Sugar – ¼ cup

Cloves – 5

Cinnamon stick – 1

Ground ginger – ¼ tsp.

Salt -1/2 tsp.

Black pepper – ¼ tsp.

Red chilli powder – 1/8th tsp. (optional)

Fennel seeds – ½ tsp.

Star Anise - 1



Add all the ingredients to a pan and cook till cranberries soften and a sauce begins to form.

When it looks thick and syrupy, stop cooking.

Skim out the big spices like cinnamon stick, star anise and cloves

Let cool and store in a jar in the refrigerator.

Enjoy with sweet potato waffles or use with crackers and a nice sharp cheese like a good cheddar, or as a side on a thanksgiving table.
